Brachetto d'Acqui, the most characteristic of the sweet red sparkling wines, has had a constant presence in the history of Piedmontese wine, it seems that it was widespread in Piedmont since Roman times, even if the first references in ampelographic documents date back to 1800. Almost disappeared completely between the end of the 19th century and the beginning of the 20th century due to phylloxera, and then repopulated in the second half of the 20th century until the intuition of its sparkling wine making must in consumption, especially for young people.

The bunches are harvested by hand in baskets, immediately pressed to obtain a very sweet must with a characteristic red color, which will subsequently ferment in an autoclave. Thanks to this method, the aromatic qualities of the grapes are translated into a textbook bouquet, rose, iris, raspberry, wild strawberries. Inviting sweetness on the palate, creamy and intense, all balanced by the pleasant effervescence and remarkable freshness

The "modern era" of the company was marked by the expression of a Cocchi di Alta Langa style which today is characterized by Pinot with long aging on the lees and a minimum dosage of sugars.

Like the Pinots, Cocchi's Chardonnays also see only steel and glass and express the purity of the grape with a contemporary, rigorous and seductive style.
