Coffele Valpolicella DOC - 6 bottles
Production area from our property located in the hilly area (approx. 400 m above sea level) of Campiano (a hamlet of Cazzano di Tramigna - Verona) falling within the Valpolicella DOC area. The harvest, exclusively manual, begins in October and all the grapes are harvested separately in boxes of no more than 20 kg.
After pressing, fermentation takes place at a temperature between 25 ° and 28 ° for 10-12 days, with pumping over three times a day for about 15-20 minutes. The aging of the wine takes place in steel for about four months. Very intriguing nose of red fruits, cherries and black cherry, with hints of spices and red flowers. Definitely fresh, harmonious, little tannic, carefree and delicious sip of red fruits.
The Coffele farm today boasts a vineyard park of about 25 hectares (75 Veronese fields) in Castelcerino, in a single body cultivated mainly in Garganega, but also in Trebbiano di Soave and Chardonnay, the vineyards, always sunny and ventilated, are surrounded by secular olive trees, cherry trees and woods. These are the vineyards with the highest altitude in the Soave Classico area (up to 400 m a.s.l.) and are located in the northernmost part of the Municipality of Soave. The exposure is south-south / west and has calcareous soils that give greater acidity, finesse and longevity than the average.
