Grape variety: 100% Fiano di Avellino
Production area: Vineyards located in the hilly area of the municipality of Lapio, facing south.
Soil type: Clayey-limous on a marly basis
Vinification: The grapes, harvested by hand when completely ripe, are severely selected and pressed whole, so only the flower must is first cold-decanted and then inoculated for alcoholic fermentation. Fermentation takes place for a part in oak barriques French and for the remaining part in low temperature steel.
The wine remains in sur-lie aging always in wood and steel and finally refines at least 6 months in the bottle.
Color: Crystalline, straw yellow with golden reflections, bright.
Bouquet: Aromas of fairly ripe and tropical fruits that immediately leave room for a mineral note, hawthorn flowers and notes of candied fruit, with a touch of toast.
Taste: Elegant, full with a good acidity that balances the perfect balance of the wine, a very persistent and spicy finish.
Food pairings: Wine of great versatility also in terms of regional and international traditions: it goes well with structured dishes, soups, fatty fish, legumes, risottos and white meats and fairly fresh cheeses; dishes with a strong aromatic kit.
Serve at a temperature of 12-l4°C.
