Our Colatura di Alici di Menaica is the result of the surfacing of the liquid extracted from the salting of the Anchovies of Menaica Slow Food Presidium.
It is characterized by a light color, has a delicate but strong flavor.
It will give your dishes, whether they are vegetables, pasta or even simple croutons, a unique flavor of the sea.
We covered the cap with white shellac to give safety and elegance.

Spaghetti with Extra Virgin Olive Oil and Anchovy Colatura della Menaica alla Medeaterranean.


Start by boiling the pasta in plenty of unsalted water; in the meantime, peel the garlic and chop the chilli. Put in a large pan with the oil. Sauté them for about a minute. Drain the pasta al dente, keeping a little of its cooking water aside, and transfer it to the pan. Finish cooking the pasta, in a pan over high heat, with a little cooking water to keep it very moist. When the pasta is cooked and the sauce is well blended with the spaghetti, turn off the heat and add the chopped parsley. Transfer the pasta to a bowl or individual dishes and add a spoonful of anchovy sauce per person.
