Method of Production
Selection of grapes with a high sugar content, vinification with Ganymede system for continuous reshuffling pomace and color extraction and Tannins.
During the winter, fresh Valpolicella wine is spilled on the amarone pomace according to the traditional "Ripasso" technique and refined in part in steel and partly in oak barrels for 12 Months.
